Los Cebollines celebrates one of the most iconic recipes of mexican cuisine with the launch of its highly anticipated ” Festival de los merititos Chilaquiles” available from june 5th to july 31st, 2025, at all its restaurants, as well as for home delivery.

This festival unites the best of Los Cebollines’ offerings: its renowned nachos, its juicy birria, and other ingredients, prepared with the restaurant’s authentic recipes. The ” merititos chilaquiles mexicanos ” are made with the famous Los Cebollines Nachos, which gives them an authentic flavor, a crunchy texture, and an unmistakable touch that characterizes this delicious product.


“Chilaquiles are an ancestral dish of Mexican cuisine. “Its name comes from the Nahuatl chīlāquilitl, which refers to ingredients cooked or bathed in sauces. Over time, this recipe has evolved and been enriched by the flavors of each region, adapting to new generations without losing its essence. For almost two months, diners can enjoy innovative versions of chilaquiles with a signature Mexican flavor at all Los Cebollines restaurants at an affordable price of US$9.99, which includes one beverage: coffee in the morning and a natural beverage at noon and dinner. It’s worth noting that chilaquiles are served with fried eggs for breakfast, while they are served with other ingredients for lunch and dinner.

Birriaquiles Habanero: Los Cebollines nachos, smothered in spicy habanero green salsa, served with our unique birria, sour cream, red onion, and cilantro. Garnished with our delicious melted Chihuahua cheese and chile toreado, accompanied by birria broth and charro beans.

Chilaquiles Plaza México: Tampiqueña and Toluqueño-style chorizo fajitas, atop our divorced chilaquiles, sautéed in our famous Suiza and green salsas, garnished with Chihuahua cheese and cilantro.

Chilaquiles Suizos Mexicanos: Los Cebollines nachos, sautéed with chicken and the traditional Swiss-Mexican salsa recipe (grilled green salsa, sour cream, and Chihuahua cheese). Accompanied by chunks of avocado, grilled layered cheese, sour cream, dried cheese, onion, and cilantro.
